{Recipe} Bacon and vegetable bake

Bacon is one of my favourite things to eat (and I know a large portion of the Internet agrees with me) and due to having a craving for both vegetables and bacon at the same time, this recipe was born.

To Bacon Or Not To Bacon?

Even though this recipe is filled with bacon, you could substitute it for another meat or leave it out entirely. Either way this dish is warm and delicious and fairly healthy if you ignore the copious amounts of cheese it’s smothered in.

The vegetables I used were ones I had on hand but I made this recipe up on the fly, so there’s no fixed rules. Experiment with your favourite veggies and make it up as you go along!

A warm dish filled to the brim with crispy bacon bits, delicious veggies and cheese.

Ingredients
  1. Bacon 200gr
  2. Vegetables
  3. Cheese for topping
  4. Salt
For the cheese sauce
  1. 2tbs butter
  2. 2tbs flour
  3. 2 cups milk
  4. 1 cup shredded cheese
Instructions
  1. Start by chopping your veggies into cubes and slices. {I used potatoes, sweet potatoes, butternut, red peppers, marrows, mushrooms and onion, but feel free to experiment with your favourites.}
  2. Cut potatoes into thick slices to use as the base.
  3. Boil hard vegetables such as a potatoes and butternut for 10 - 15 minutes so that they are soft but not mush. {I do this by covering the veggies with boiling water and sticking the bowl in the microwave for 10 minutes.}
While the veggies are boiling
  1. Fry your bacon until cooked.
  2. Chop your fried bacon into bits and set aside.
  3. Make your cheese sauce by melting the butter in a pot. Add your flour and let it cook for a short while. Add your milk and whisk to keep it from boiling or forming lumps. Remove from heat once slightly thickened and add the cheese. Whisk and set one side.
Veggies assemble!
  1. Preheat your oven at 180°C/350°F
  2. Throw all of your vegetables together and season them with some salt and pepper.
  3. Grab an ovenproof dish and layer your sliced potatoes on the bottom.
  4. Sprinkle a handful of bacon bits over your potatoes and a third of your cheese sauce.
  5. Add half of your vegetables and repeat the bacon bits and cheese sauce process.
  6. Do the above again.
  7. Your dish should now be filled with veggies, bacon and cheese sauce!
  8. Cover the top with cheese and pop it in the oven for 15 to 20 minutes until the cheese has browned and your veggies and cooked and soft.
Notes
  1. This dish can either be served as is for 2 people or as a side dish for 4 people.
  2. Tip: Roast chicken is delicious as a main with this bake.
